Tomato & capers

There are always some kinds of salad on the dining table.

One of my favourite salads from last summer was a tomato, caper and calamari salad. It instantly reminded me of dining at the coastal town of Italy, which ingredients are simple and fresh.

RECIPE: Tomato, Caper and Calamari Salad FOR 4 SERVINGS

INGREDIENTS

  • Squid or calamari 400g

  • Tomatoes, 4 medium size

  • Parsley, small bunch

  • Capers, 2 tablespoons

  • Olive Oil

  • Salt and Pepper

STEPS

  1. Cut squid or calamari into desirable bite-size, blanch the squid for about one minute. Quickly rinse under cold water.

  2. Slice tomatoes. Finely chop parlsey

  3. Plate up, layer of tomatoes, calamari, and capers. Drizzle with generous amount of olive oil. Season with salt and pepper. Finish plating with parsley.
